Happy HOT POT New Year!

Rang in the New Year with Hot Pot (of course). And even though it’s 100 degrees in Hawaii ALL THE DAMN TIME, it was so cozy sitting around the dining table with my family, pulling goodies like fishcake, shroomies, and noodles out of the collective pot. 

I think it’s fair to say that 2020 was not the year we were all imagining it to be, but that doesn’t mean it wasn’t eventful. I won’t sit here and be annoyingly positive in my 2020 review, because it honestly sucked. Yes, I said it. Last year SUCKED! We were basically locked in our apartments in New York from March until September, with no room to be alone, to exercise or to separate from our work life (My desk was in the living room, so I literally stared at it while trying to watch the millionth episode of The Office.) 


What good can I pull from the 2020 Dumpster Can? The unfortunate circumstances of last year allowed me to work remotely, and therefore provided me the flexibility to come home to my family. Not being with them was one of the hardest parts of the pandemic. JP was also lucky enough to come home. Furthermore, we, as a couple, strengthened our bond — that is, after months of fighting and being annoyed at seeing each other every waking moment of each day (LOL). 


I also cooked a lot more than I ever have. We didn’t order a single takeout for six whole months (Impressive, I know.) I cooked a lot of our favorites, and once we were bored of those dishes, we tried new ones, experimented and got really creative in the kitchen. That’s not to say we didn’t also eat a lot of frozen pizzas and packaged saimin, because we definitely did. We were trying to keep count of how many at one point, but probably gave up after we hit triple digits — kidding! Maybe. 


I think life, in general, is a lot like a boiling cauldron of Hot Pot: You dive in and don’t really know what you’re going to get — until you pull up. Even though the “surprises” from 2020 were mostly unwelcome, we’ve all pretty much digested the reality and are dealing with the fallout as best we can. Do I think 2021 could be a lot worse than 2020, definitely, but it could also be 100x better. And that’s what I’m counting on. Regardless, I’ll eat it up and move ahead, because that’s really all we can do. 💛

    That hot pot looks super good!!

    Hopefully 2021 isn't another dumpster can lol

Sometimes it’s really hard to believe how long it’s been, because it still feels so fresh. I remember getting that call from Kels. I knew something was wrong. As I was awakened from sleep, I just knew. I was told to sit tight, during the weeks before your death. Being an ocean away made it harder, not because I couldn’t say goodbye, I knew you didn’t want anyone around you when you were ready to go, but because I couldn’t be there to hold your boys and to hug my sister as she came to terms with you leaving. The Importance of Improvisation

The above is a photo of literally a handful of cookies I made ten minutes ago. Yes, they are smaller than the average oatmeal cookie, and yes, they are thicker too. No, I did not do this to be purposefully creative. You see, I am without cookie pans, flat pans, or any real pans at all to cook/bake on. What to do? When you really want cookies...you make it happen.  I rummaged through the almost empty cupboards of my kitchen and found bite-sized cupcake pans? I have no idea. Anyway, I improvised . Now, I don't know if I'll ever buy cookie sheets. These soft-on-the-inside, crunchy-on-the-outside delights were amazing! They are definitely easier to scarf down, which may or may not be a good thing; to me, it's a great thing .  So the next time you're under-equipped and not prepared, take the step to use what you've got and maybe, just maybe you will discover something new about the things around you and most importantly, about yourself.
